Application effect: It is a high quality carrageenan specially for meat products. It can be used for injection, tumbling and mixing in meat products. It has high purity without any other colloids.
Features:
Solubility: It is insoluble, but it can be swelled into colloidal blocks in cold water. It is insoluble in organic solvents, while easily soluble in hot water to form translucent colloidal solution (The dissolution rate increased in hot water above 70 ℃).
Gelation: Reversible gel can be produced in the presence of potassium ions.
Thickening: when the concentration is low, low concentration sol is formed, which is close to Newtonian fluid, and high viscosity is formed when the concentration is increased.
Synergism: It gives a strong synergism with other components such as locust bean gum, konjac gum and xanthan gum to enhance the elasticity and water retention of the gel.
